Binchotan is traditional charcoal from Japan. It dates back to the Edo period when a craftsman named Bitchu-ya Chozaemon started producing the charcoal in Tanabe, Wakayama, during the Genroku era. The raw material consists of oak, especially Ubame oak, today the official tree of Wakayama prefecture. Binchotan is a type of charcoal or hardwood charcoal. The fineness and high quality of Binchotan are attributed to steaming at high temperatures (around 1000 degrees Celsius). Although it is often believed that binchotan burns hot, it actually burns at a lower temperature than regular charcoal, but longer, which is why it is preferred by a number of Japanese chefs. As it does not smoke or emits other unpleasant odors, it is a favorite of cooks for Unagi (freshwater eel) and Yakitori (chicken on skewer).
