If you buy Japanese knives, you can also buy a water stone (grain size 800-1200). You can use this stone for small edge repairs, but the middle stone is indispensable for creating an edge and for training even necessary burrs for sanding. If you have experience with sharpening Japanese knives, then (Grain 5000+) is a great waterstone and therefore a wise buy. The fine stone scratches the surface due to the abrasion effect of the medium, removes stone and has a “mirror finish”. This is very much appreciated by Japanese and Western cooks. We do not recommend the coarse grained stone (Arato) for inexperienced users, as improper use can seriously damage the blade.
